Raccolto
L’olio extra vergine di oliva per legge può essere definito tale solo se è privo di difetti organolettici e se ha un’acidità inferiore a 0,8%. Per questo motivo il buon olio nasce sempre da olive sane, fresche e raccolte dall’albero con la massima attenzione e nel giusto momento. Le olive di tutte le varietà quando non sono mature sono sempre verdi. Poi alcune varietà – come le olive leccino e moraiolo –subiscono un viraggio di colore e diventano scure (la c.d. invaiatura), mentre altre varietà come il frantoio restano molto verdi anche quando mature. Per mantenere il frutto sano e non danneggiarlo, la raccolta può essere fatta manualmente o meccanicamente: la seconda permette di raccogliere tutte le olive in tempi più brevi e nello stesso momento di maturazione. Le olive raccolte sono riposte in cassette in legno che consentono la giusta aerazione e vanno frante entro 1 giorno. L’ossidazione dell’oliva (che può derivare da olive ammaccate, troppo mature o non subito frante) è il nemico numero uno della qualità dell’olio che ne deriva.
Estrazione a freddo
Tutti gli oli extravergini Coppini hanno a monte stringenti prerequisiti qualitativi: provengono tutti da materie prime di massima qualità, ottenute con tecnologie moderne, igieniche e di estrazione a freddo, ossia a temperature controllate inferiori ai 27° che garantiscono una maggior conservazione delle componenti termolabili dell’olio, come i polifenoli, la vitamina E ed i composti volatili che generano gli aromi ed i flavours positivi). Le materie prime sono tassativamente analizzate dal laboratorio interno, sia dal punto di vista chimico-fisico (tramite le analisi alla ricezione) che organolettico (assaggio). Se perfettamente conformi, vengono poi stoccate al riparo da luce e calore in grandi silos all’interno della vasta e modernissima area stoccaggio aziendale.
Come nasce l’olio Coppini
I processi di lavorazione successivi sono:
– la filtrazione > toglie le impurità ed i depositi dall’olio
– la brillantatura > rende l’olio grezzo limpido
– la miscelazione > è l’arte sapiente di casa Coppini che permette di creare prodotti finiti perfetti e di tanti gusti. Assaggiando, miscelando e riassaggiando, la famiglia Coppini crea extra vergini di infinite varietà: molto fruttati (come il Mastro Angelo), o perfettamente equilibrati (come il Coppini 100% Italiano o Classico), o delicati e non troppo piccanti (come il Pedimonte o Coppini evo). I blendmaster di casa Coppini – a partire da Angelo ed Andrea Coppini – si tramandano di generazione in generazione talento nell’assaggio ed eccezionali conoscenze tecniche, per creare oli extravergini unici, sperimentando sempre nuove ricette e gusti per sorprendere i consumatori con nuove esperienze di gusto.
Terni and our territory

The Marmore Falls are one of the best known and oldest symbols of the city of Terni, together with its patron saint, St Valentine.
At 165 metres high, they are the highest waterfall in europe.
Near the Terni town of Marmore, the Velino river plunges into the gorge of the Nera river below, forming the wonder-full waterfall. It was conceived by the Romans, who thought of connecting the Velino river of the Rieti town with the Nera river of the Interamna valley, now Terni. The current Terni area of the Valnerina is known not only for hosting the waterfall, but also for its olive-growing hills and production of extra virgin olive oil.
